Raw Burst Experience – Day 4

Today was a very fun day.

As usual we slept-in, as this is our last day to do so.

Again, no breakfast because we woke up around 11 am.

For lunch we went to Cosmic Cafe, a vegetarian restaurant, on Oak Lawn in Dallas. The food was delicious.

Hummus and Nan (not vegan I know)

Tomato Soup (This was AWESOME!)

Taco Trinity – three corn tortillas with squash, zucchini, mushrooms, onions, and bell peppers
served with black beans, rice, and a small salad with vinaigrette dressing.

We then drove around Dallas site seeing in the Uptown and Turtle Creek areas till we made our way over to Whole Foods.

We got a few things we needed. Though, we went with the intent of buying a lot of things that we needed, but quickly discovered that we could get most things cheaper by purchasing them online. Which is what we are doing for our nuts, seeds, oils, and spices.

I made a delicious dinner that was inspired by a recipe found on www.goneraw.com

Warming Butternut Squash Soup

Servings:

Ingredients: 

2 cups of boiling water
1 cup peeled, cubed butternut squash
1 peeled orange
2 Tbsp coconut flakes or chips
2 Tbsp almonds (or other nut of preference)
2 tsp miso, if you aren’t a miso fan, add additional salt at the end
2 tsp maple syrup (or other sweetener of preference)
2 pinches of ginger
1 pinch of cinnamon
1 pinch of cayenne
salt to taste

Preparation: 
Boil about 2 cups of water in tea kettle.
Meanwhile, peel butternut squash, cut open, remove seeds and pulp, cut into cubes. You will only be using 1 cup of squash, so if you have extra put in a storage container for additional soup later or future use in another recipe.

Put everything in blender with 1 1/2 cups of hot water. Blend until it is perfectly smooth. Add more water to create the desired consistency, I prefer the consistency of a thick cream soup. Taste and adjust seasonings accordingly.

Garnishings:

This soup can be embellished in many ways.  You could add cilantro, onions, or cashew cream, be creative.

We all, even my 2 year old, really enjoyed this soup!

For exercising, I, again, got 2 lower body workouts in.

The great news is that I have lost 3 lbs. in 3 days so far. I had already lost 3 pounds a few days prior to starting this program. So, from my starting weight to my goal weight I have lost a total of 6 lbs. (YEA!) We are doing great!

  1. I am assuming that the “pinch of ginger” in this recipe is dried/ground, right? Just checking. I’m going to try this recipe soon.

  2. yup, it was dried and ground. :) You can certainly use fresh, but very little, as fresh ginger is quite a bit stronger than dried and ground, from my experience at least.
